Hello my name is Justin and I run the Classico fresh pasta stall at St. George's market on Saturdays.
Classico was born when I picked up and ol 'La Parmiagiana' pasta extrusion machine, when a local deli closed its doors in 2004. I began producing pasta to sell at the weekly 'City Food and Garden Market' in St. George's market in Belfast. It was an instant success, as no-one was producing truly fresh pasta anywhere in N. Ireland, I accompanied the pasta with a range of great sauces, cheeses and a few other basics for pasta cooking.
I also decided to cook some of the pasta there in the market so that customers have a bowl of pasta for lunch. This complemented the other range of food stalls at the market perfectly, there are stalls offering food from all parts of the world, using as much local produce as possible.
I have loved food from a young age and although I have been working in the restaurant business for around 20 years my heart has always been with the home cook. All good food come from necessity and this is where the home cook always has an advantage over the professionals. I always seem to produce some of my best meals when the cupboard is almost empty.
This is why I set up Gusto to help the home cook, the are no ready meals on sale at my stall, the sauces, although ready to use still need seasoned and they are so simple that they can be used as the backbone to so many other sauces, soups and stews. Pasta is a staple in our house and so many others and can be ate simply or you can use it in a complex dish fit for any dinner guests.
